According to the Monster Manual,

Oozes are gelatinous creatures that rarely have a fixed shape. They are mostly subterranean, dwelling in caves and dungeons and feeding on refuse, carrion, or creatures unlucky enough to get in their way. Black puddings and gelatinous cubes are among the most recognizable oozes.

Half-Ooze These creatures have a humanoid form, but are fluid and appear to be made of solid gel. Your Dexterity and Constitution scores each increase by 1. Half-oozes are between 5 and 6 feet tall, even though their bodies are often amorphous. Your size is Medium. Your base walking speed is 30 feet.
Inkling, Variant Aquatic creatures capable of firing ink over large distances. Your Constitution and Dexterity scores increase by 1. Inklings are slightly shorter than humans, averaging at a height of about 4-5 feet. Due to their amorphous body, they are almost weightless, weight about 20-50 pounds on average. Your size is Medium. Your base walking speed is 30 feet.
Mimic Slime A Slime with the ability to morph into other objects or people but cannot change their color. Your Constitution score increases by 2 and your Dexterity increases by 1. Mimic slimes are 2 feet tall and weight 20lb. Your size is Small. Your base walking speed is 25 feet.
Muk Toxic slime Pokémon that smell worse than feces, rotting flesh, eggs, and heavily fermented sauerkraut... Yuck Muk are hearty, yet, are so rancid that rotten eggs and corpses smell nice by comparison. Your Constitution score increases by 2 and your Charisma score decreases by 2. Muk stand a little over 3 feet tall, and weigh around 66 pounds. Your size is Medium. Your base walking speed is 25 feet. Plants do little to slow you down. Any plant in your way is left withered and dead.
Ooze-Kin All ooze-kin share some common composition, giving them some similar traits. Your Constitution score increases by 2. Ooze-kin are usually about 5 and a half feet tall, weighing anywhere from 60 to 160 pounds. They can alter their height by up to a foot at-will. Your size is Medium. Your base walking speed is 25 feet.
Silmarin Slimy humanoids that live in swamps. Your Constitution score increases by 2. Silmarin usually stand at over 6 feet. Your size is Medium. Your base walking speed is 30 feet. You also have a swim speed of 25 feet.
Slimefolk Sentient slimes that take the form of humanoids. Your Constitution score increases by 2, and one other ability score of your choice increases by 1. Slimefolk vary in size, and even individual slimefolk can change their size by taking in or expelling water from their bodies, but in general, slimefolk are comparable in size to most other intelligent races. Your size is Medium. Your base walking speed is 25 feet.
Slimelings Bipedal Oozes who enjoy absorbing their victims Your Constitution score increases by 2, and your Strength or Dexterity score increases by 1. Your size is Medium. Your base walking speed is 30 feet.
Zen'Trath A race of monstrous, slime-like creatures born from magical experimentation. Your Dexterity score increases by 2, and your Charisma score increases by 1. Although the exact mass and height of your body changes if you shed or absorb organic matter, it can never exceed 7 foot or go below 5 foot in height. Your size is Medium. Your base walking speed is 30 feet.
